Spinach Stuffed Chicken Breast








Boneless chicken breasts

Your favorite seasonings [/one_half_last]

1. Wash chicken and carefully cut in half to make the breasts thin.
2. Add your desired seasonings.
3. Baking it on 350° for an hour. Then I will stuff it. I am paranoid to the umpteenth power of my meat not being cooked fully. (So I cook it for a lil while…then stuff it)

pre4.  I remove the chicken from the oven and pour the juice (broth) into the skillet.

5.  Bringing the broth to simmer, I add the spinach, onions, marinated mushrooms, marinated sun dried tomatoes and carrots.


6. Slice the warm chicken again.
7. Taking a spoon, I scoop and place the sauteed spinach and vegetables inside the breasts.
8. Pour the remainder of the mixture on the breast.
9. Dice tomatoes and squeeze lemon on the chicken.
10. Cover and place the dishes back in oven for 15 minutes.
